Overview
I have made brown sugar jujube cake many times, and both the elderly and children love it. Yesterday I made 2 plates and gave them away, which was well received by everyone. It’s not my fault, it tastes much better than the ones bought outside. The strong jujube aroma is irresistible. It’s really nice to make some to give to relatives and friends during the Chinese New Year.

Make jujube paste first. Remove the stems of 150 grams of dried red dates and soak them in water for half an hour. Add an appropriate amount of water to the pressure cooker and add the red dates. Bring to a boil over high heat, then turn to medium-low and cook for 10 minutes. Remove the core and put it directly into a blender to puree (the dates have absorbed enough water, so you don’t need to add water and stir directly. You don’t need to remove the skin of the dates)

Add a little starch to brown sugar and beat into powder.

Put 55 grams of corn oil in the egg yolk.

Put 222 grams of jujube puree.

Put 95 grams of milk. (Do not put it all at once, adjust the amount of milk appropriately according to the dryness and humidity)

Mix the milk and egg yolk mixture evenly with a mixer and set aside.

Add 3 drops of white vinegar to the egg whites, add brown sugar in three batches, and beat until stiff peaks form. Lift the whisk head to form a strong, pointed corner.

Add sifted flour, baking powder and baking soda to the milk and egg yolk liquid.

Use a whisk to quickly stir the milk, egg yolk and cake flour mixture. The time cannot be too long, about 3 seconds is sufficient. Gluten will easily develop if the time is long.

Use a rubber spatula to mix the milk, egg yolk and cake flour mixture with the whipped egg whites in two batches. (The egg whites are whipped in place and will basically not defoam)

Pour into the mold, smooth the surface and shake a few times.

Place in the middle rack of the oven at 170 degrees for about 35 minutes.

After taking it out of the oven, shake the baking pan a few times, invert it and let it cool.
