Braised pork rice
Overview
As winter approaches, I always want to eat some warm-up foods. However, the current price of pork remains high. However, no matter how expensive it is, I still want to eat pork.

Cut the pork belly into strips and then into 1cm cubes.

Dice mushrooms.

Cut onions into rings and fry in oil pan (scallions are crispy in oil).

Be patient, don't fry it until it's burnt, or don't fry it properly.

Remove the fried onions and control the oil.

Finely chop onions.

Leave the oil in the pot, add the diced pork belly and stir-fry.

Stir out the fat.

Add salt, light soy sauce, dark soy sauce, and cooking wine. Add chopped mushrooms, ginger slices, green onion segments, garlic, star anise, and rock sugar.

Add chopped onions and stir-fry evenly.

Add 3 hard-boiled eggs.

Add water to cover all the ingredients and simmer over low heat for 1 hour.

Wash the vegetables and blanch them in a pot. Add a few drops of cooking oil and salt to the pot to keep the vegetables sparse and clear.

Pour the white rice out of the pot into a bowl, cut the braised eggs, and put green vegetables on top.
