Sichuan peppercorns, star anise, onion, ginger, garlic and aniseed are all ready to be prepared in a small bowl

Soak the dry ingredients 2 hours in advance, wash them after soaking, wash them twice more and drain them and set aside

Soak the ribs for 30 minutes in advance to soak away the blood, boil them in cold water, boil them in boiling water for 5 minutes, and then filter the water to make sure it is dry, otherwise they will fry again during frying.
