Beef stew with tomatoes and potatoes

Wash and cut into larger cubes. (It will shrink after cooking, so cut into larger pieces.)

Slice ginger and peel garlic.

Peel and cut potatoes into cubes.

Peel tomatoes and cut into cubes.

Heat oil in a pan and sauté ginger and garlic until fragrant.

Add beef and stir-fry until it changes color slightly.

Add the potatoes and half the tomatoes and sauté.

Pour in white wine with a frying spoon, pour 3 bowls of water, add oyster sauce, light soy sauce, dark soy sauce, sugar, bring to a boil over high heat, then turn to medium to low heat and simmer for 1 hour. Cook until beef is tender.

Add the remaining tomatoes and cook for 5 minutes, reduce the juice slightly over high heat, but do not reduce it too dry

Sprinkle with chopped green onion and serve.

The sauce is great with rice and noodles.
