Wash the pork belly, wash the cucumber, grate it into shreds, squeeze out the water and set aside.

Add ginger slices and cooking wine to the pork belly and cook until cooked through. It would be nice if the chopsticks can be inserted easily.

Mix minced ginger, minced garlic, minced green onion, light soy sauce, balsamic vinegar, salt, cooked chili pepper, pepper powder, sesame oil, pepper oil, chicken essence, and sugar, and stir well. If you have white sesame seeds or chopped peanuts at home, you can put them in.

Remove the cooked pork belly, wash it with cold water, let it cool slightly, and cut into thin slices, the thinner the better. Then plate it.

Pour the seasoning over the pork belly and serve.
