Live on a budget---Baked Pumpkin with Egg Yolk
Overview
Baked pumpkin with egg yolk was my first time eating it and making it for the first time. Although I was familiar with the name of the dish, I also made it very innovatively. But in the whole process, I felt that I used all the ingredients and handled them properly, worthy of my role as a housewife. Boiled salted duck eggs, the egg yolk is of course baked pumpkin, the egg white is fried with green peppers, the pumpkin needs to be neatly sliced, and the leftovers are steamed and fermented to make steamed buns, and they are very beautiful steamed buns. There is no waste at all, and it is an extraordinary success. It’s not just new dishes that bring a sense of accomplishment.

Peel the pumpkin and cut into thick strips.

Put it in the pot and cook it until it is cooked but not rotten. The way I judge it is to use chopsticks to pinch it with normal force and it can be broken by pinching it with a little force.

Remove and drain.

Crush the duck egg yolk with a spoon.

Heat oil in a pan, add duck egg yolk and stir.

Mix the egg yolks until evenly frothy.

Add pumpkin strips and stir.

Coat each pumpkin with egg yolk and let the surface dry slightly before serving.
