Fried preserved eggs with black bean sauce and okra

The super charming smooth-tasting okra is paired with my favorite duo Hei Hei (tempeh + preserved egg), a heavy-flavored dish that goes well with rice and wine. Start!

Pour preserved eggs into a pot with cold water, boil until the water boils, then turn off the heat and simmer for 3 minutes (to solidify the egg yolk to avoid staining the vegetables), cut into cubes and set aside

Rinse the dried tempeh through a strainer, drain, and slightly reduce the saltiness

Cut okra into small pieces, mince ginger, garlic and chili pepper and set aside

Heat the oil in a pan and stir-fry the minced pork, add onion, ginger, garlic and chili and sauté until fragrant

Add black bean paste and stir-fry until fragrant

Add all seasonings, add appropriate amount of water and bring to boil

Add okra and fry until cooked

After turning off the heat, add the preserved egg cubes, mix well and serve.
