Add a bowl of water to the pea flour and stir with chopsticks until the flour is completely dissolved

Put a large ladle of water in the wok, wait for the water to boil, slowly pour the mixed pea flour into the pot with your left hand, and use the spatula with your right hand to stir constantly. Keep stirring otherwise it will become mushy

Turn on low heat and stir for 3/4 minutes. When it becomes a paste, turn off the heat. Pour the stirred jelly into a basin and let it sit for a few hours

After a few hours, when the stirred jelly turns white, if there is no heat when you touch it with your hands, turn the pot upside down on the cutting board, and the white and tender jelly will come out

Use a knife to cut the jelly into long strips and put it into a plate. Use a bowl to mix the chili oil, pepper powder, vinegar, soy sauce, salt and minced garlic. Pour it over the jelly and sprinkle with chopped green onion.
