Prepare a plate of overnight rice.

Mince the mustard, mince the lean meat, and chop the green onion into finely chopped pieces.

Crack two eggs into the pan and fry until cooked, then scoop them out.

Leave oil in the pot, add mustard and minced meat and stir-fry for half a minute.

Add rice and eggs and stir-fry evenly.

Pour in a spoonful of light soy sauce and stir-fry until coloured.

Finally, add chopped green onion, a little salt and chicken essence and stir-fry until flavourful.
