Second sister Tuding
Overview
This is a famous dish that I ate when I visited Chengdu 17 years ago. I always wanted to eat this dish after returning home, so I imitated it once. Unexpectedly, it was unanimously praised by the whole family, especially my daughter, who loved it so much. Now this second sister’s rabbit dish has become a must-make dish for our family during the Spring Festival. My daughter said that this dish tastes like my mother’s!

Now kill the rabbit from the vegetable market and take care of its internal organs.

Clean the rabbit.

I only chose the front half of the rabbit, and I used the hind legs to make pickled rabbit.

Place rabbit meat in a pot under cold water, add green onions, ginger, peppercorns, and a spoonful of white wine.

Bring to a boil over high heat, remove the foam, cook over medium heat for 8 minutes, add the rabbit's offal, boil for about 2 minutes, then turn off the heat and simmer for about 15 minutes.

Take out the rabbit meat and soak it in iced boiling water that has been frozen in advance.

While the rabbit meat is cooling down, crisp up the peanuts. Blanch the peanuts in boiling water in advance, then drain the water, pour into cold oil, and fry slowly over low heat.

When there are no bubbles in the oil, take out the peanuts and let them cool.

Wash and cut the onions into cubes.

Mash the ginger and garlic with a little spoonful of salt, then add two spoons of cold boiled water to cover the ginger and garlic.

Chop the chilled rabbit meat into small cubes and slice the internal organs.

Add half a spoon of salt and mix well, then add two spoons of ginger and garlic water, two spoons of light soy sauce, two spoons of vinegar, half a spoon of sugar, one spoon of pepper noodles, two spoons of red oil chili, two spoons of red oil, two spoons of pepper oil, two spoons of white sesame oil, one spoon of sesame oil, half a spoon of chicken essence, and half a spoon of MSG.
