Blanch the chicken legs in cold water until they drain.

Wash and put into pressure cooker.

Add green onion segments, ginger slices, garlic granules, star anise, cinnamon bark, bay leaves, dried red pepper, peppercorns, rock sugar and salt.

Add cooking wine, light soy sauce and dark soy sauce.

Pour enough water, select the "Chicken or Duck" button, turn off the power after the sound prompts, and continue soaking for one night.
