Overview
I have always thought that puffs are a magical thing. The cookie-like batter can actually expand into hollow buns, with crispy puff skin and a rich flavor. It feels like eating a cheesecake version of puffs. The filling is rich and you put the whole thing in your mouth. It is rich and fragrant, great!

Put water, salt, sugar, and butter into a pot together, heat over medium heat and stir slightly until the butter is completely melted.

Continue to heat until the water boils

After the water boils, turn to low heat and pour all the flour into the pot at once

Stir quickly with a spatula to completely combine the flour and water. Keep stirring until all the flour and water are combined and the pan is non-stick, then turn off the heat and take the pan off

When the batter has cooled down to a point where it is not too hot, you can add the beaten eggs
