I got this dish from Whole Foods Beauty yesterday. I made it today. It tastes good and the potatoes are delicious. I’ll share it.

Wash the potatoes and steam them in advance, about 40 minutes. You can cut them in half and steam them to save time;

Take an appropriate amount of chili powder and cumin powder and roast them in a dry pan until fragrant;

After the potatoes are steamed and the chili noodles are fragrant, you can have a family photo;

Peel and dice the potatoes. Allow them to cool completely before cutting;

Heat oil in a pan, with a little more oil than usual for cooking. When it is 40% or 50% hot, add diced potatoes and fry;

Just shake the potatoes in the pot from time to time. While frying the potatoes, cut the ham into cubes, beat the eggs, and chop the shallots into chopped green onions;

When the potatoes are fried until golden brown, pour out the excess oil in the pot, add the ham, pinch a little salt with your hands and sprinkle it on, and fry the ham slightly;

Flatten the potatoes and ham in the pot, pour the egg liquid from the outside in, fry over medium-high heat, and sprinkle with an appropriate amount of chili cumin noodles;

Flip the shaped potatoes over and lightly fry the egg liquid on the other side;

Fry the other side for a while and then flip it back over, sprinkle some salt, cumin, chili powder, and chopped green onions and serve.
