  1. Cut the tofu into slices about 5mm thick, apply an appropriate amount of salt on both sides and marinate for about 15 minutes. Cut green onions and ginger into shreds.

  2. Beat the eggs, coat the tofu with a thin layer of starch, add the egg liquid and top with the egg liquid.

  3. Fry in oil pan until golden brown on both sides.

  4. Pull it aside, add onions and ginger and stir-fry until fragrant.

  5. Pour cooking wine, light soy sauce, 1 small bowl of water (chicken soup is better), oyster sauce, and sugar along the edge of the pot. Bring to a boil over high heat, then reduce to low heat and simmer.

  6. Cook until the soup thickens, sprinkle with chopped chives.

  7. Remove from pan and plate.
