Lamb stew in casserole
Overview
When the weather gets cold, my family usually uses casseroles. Whether making soup or porridge, I like to use casseroles the most. Simmering the casserole over low heat allows the nutrients to be fully released. Not only does the casserole taste better, but the heat preservation performance of the casserole is more suitable for cold weather. Today, we stew mutton in a Kunbo food-grade casserole that can be broken even by dry cooking and rapid cooling. Soak the mutton in blood water, blanch it in a cold water pot and skim it. Take it out and put it in a casserole with boiling water (pepper, star anise, pepper and ginger). Turn to the lowest heat and simmer for a while, then turn off the heat and simmer for a while. Open the pot lid and add salt to taste. Put it into a bowl and sprinkle with chopped green onion, coriander, white pepper and a few drops of sesame oil. Paired with steamed bread, steamed buns, etc., it is simple yet delicious. A bowl of hot mutton soup will make your whole body warm and full of energy!

After buying the mutton, soak it in water to remove the blood and wash it thoroughly.

Cut the lamb into appropriately sized pieces. Put the prepared ginger, pepper, star anise, and peppercorns into the casserole, add water, and bring to a boil.

Take another pot, put cold water in it, add the mutton and bring to a boil over high heat.

Put the mutton into the casserole where the water has been boiled.

Cover, turn to minimum heat and simmer for 30 minutes. Turn off the heat. Do not open the lid. Make full use of the heat energy stored in the casserole and simmer the mutton until it is cooked through. (The specific time can be chosen flexibly according to the size of the mutton. If the mutton is large, you can use chopsticks to pierce the mutton. If it can be pierced easily, it is cooked. If it is small, you can taste it directly.)
