Autumn leaf tofu
Overview
I have been researching how to eat tofu recently. I have made the dish, but I don’t know what to name it. Its color and appearance look a bit like autumn leaves, and the main ingredient is tofu, so I just called it autumn leaves tofu.

Prepare ingredients (chop green onions, mince mushrooms)

Cut off the hard tendons on the four sides of the bean curd skin and arrange it into a uniform square shape

Peel the salted duck eggs and mash them (I used ready-to-eat ones, if they are raw, cook them first)

Mash the tofu and add an egg and mix well

Pour an appropriate amount of oil into the pan and heat it up, add the green onions and stir-fry until fragrant

Add salted egg yolk and stir-fry, add a little cooking wine

Add minced mushrooms

Add the tofu and stir-fry evenly, add a little salt to taste (adjust according to your own taste)

Sprinkle in the remaining chopped green onions

Serve out and set aside

Beat another egg into egg liquid and pour bread crumbs into the plate

Take a piece of bean curd skin, put appropriate amount of filling, then fold it in half

Fold both sides toward the middle

Secure with toothpicks

Dip the bottom into egg wash

Coat in bread crumbs

Pour a little more oil into the pot and heat it up to 40% heat. Add the bean curd skin and fry until golden and crispy. Remove and absorb the excess fat
