Matsutake eggplant
Overview
The matsutake mushrooms cooked at home are really delicious! I always buy chopped matsutake from the store, clean it when I come back, add aniseed and simmer it slowly with salad oil. The oil that comes out is matsutake oil, and the matsutake becomes oily matsutake! It’s delicious when grilling eggplant! This is my daughter’s favorite dish!

Clean the eggplant

Cut into hob pieces

Heat a pan with slightly better oil than you usually use for cooking, sauté the shredded ginger until fragrant

Add eggplant and stir-fry until soft

Add matsutake

Add some salt and sugar

Add some light soy sauce

Add some ginger sauce and stir well

Add some water and boil

When the juice dries up, sprinkle with chopped green onion and serve
