Weigh all the main ingredients except butter accurately, put them into the bread machine barrel, and set the kneading program.

When the dough is kneaded until the fascia can be pulled out, add butter and continue kneading.

Knead the dough until it reaches the expansion stage, take it out and divide it evenly into three parts. Add 3 grams of extra black cocoa powder to one part, add 2 grams of Valrhona cocoa powder to one part. Add 2 grams of flour to the original color dough and knead until it is completely expanded, and perform basic fermentation.

The dough is fermented when it reaches twice its original volume.

Each portion of the three doughs of different colors is divided into 18 small portions (the division does not need to be too even, so it is more natural).
