Red dates stuffed yam
Overview
It uses red dates and yam as the main ingredients, combined with freshly squeezed orange juice and honey. The yam is soft and glutinous, and the red dates are sweet. It has a distinct taste, is rich in nutrients, moist and sweet, and is very suitable for spring consumption. The recipe is also very simple!

Soak jujube thoroughly in warm water;

Use a knife to dig out the date core, being careful not to cut it;

Soak the pitted red dates in warm boiled water again for more than 20 minutes and set aside.

Wash the yams, put them into a steamer, and steam them over high heat for about 20 minutes until cooked;

Cut the steamed yam into small pieces of about 1.5cm;

Soak in cold boiled water for about 5 minutes to remove surface mucus to facilitate the following operations.

Take a piece of yam and use chopsticks to make a hole in the center, which is about the same size as a jujube;

Use a cutting die of appropriate size to cut off the outer skin of the yam (just for the sake of appearance, just tear off the skin of the yam);

Formed into the shape shown in the figure;

Roll the soaked red dates tightly and stuff them into the small holes in the middle of the yam slices;

Use a knife to cut off the exposed part, don’t throw it away, just pop it into your mouth;

Add 2 tablespoons of sugar and a few drops of white vinegar to the warm water to make sugar water. The white vinegar is added to prevent the yam from oxidizing;

Soak the prepared yam slices in sugar water for more than 10 minutes;

Take it out and put it on the plate;

Squeeze fresh orange juice;

Add two tablespoons of honey and stir evenly to form honey;

Pour the honey juice over the yam and jujube.
