Wash and drain the hairtail fish!

Soak the dried prunes and drain the water!

Heat the oil in a pan, stir-fry the prunes, add light soy sauce, dark soy sauce, and sugar and simmer until soft and glutinous!

Pour some rice wine into the hairtail fish to remove the fishy smell, and pat dry starch on it!
