Overview
Pork skin is rich in collagen and elastin, which can plump cells, reduce wrinkles, and enhance skin elasticity. Regular consumption of pig skin or pig trotters has anti-aging and anti-cancer effects. Wash the meat skin, put it into boiling water, and skim off the foam

Scrape the skin of the cooked meat, clean the hair, and cut it into strips; wash the soybeans soaked the day before and set aside. Prepare the onion, ginger, aniseed, cinnamon, and start cooking (I forgot to prepare the onion, so I added a few green onion segments later)

Put a lot of water in the pot, add pork skin, ginger slices, aniseed, cinnamon, green onion, add soy sauce and cooking wine, bring to a boil over high heat, cover the pot, and simmer slowly over low heat

When the pork skin is tender, add the soybeans and continue to cook. Stir every few minutes during the cooking process to prevent the pork skin from sticking to the bottom of the pot

About an hour later, when the soup thickens, remove the green onions, ginger, cinnamon and aniseed, cook over high heat for 2 minutes, add salt, chicken essence and sugar to taste

Store in a crisper box and place in the refrigerator after cooling

After a few hours, it will turn into a delicious and beautiful pork skin jelly. It can be used directly, or you can mix it with vinegar and eat it
