  1. Remove the scales from the carp, wash it, cut it into several cuts, add salt, rub it evenly with your hands and marinate it for a while.

  2. After the pot is hot, pour the oil and put the shredded ginger into the pot. Put the marinated fish into the pan and fry.

  3. Fry until both sides are golden brown, add mature vinegar and white wine to remove the fishy smell.

  4. Pour in the dark soy sauce, sugar, and a little salt and simmer over low heat for 20 minutes.
