Garlic white meat
Overview
Garlic white pork is a Sichuan cuisine and it is simple to make. Just cook the meat and cut it into thin slices and mix it with your favorite sauce. If you like it spicy, add some chili oil. If you don’t like it, leave it out. Although it is fatty meat, it doesn’t taste greasy at all. Even if you don’t usually eat fatty meat, you can still eat a few slices of this garlic white pork

Put the meat (a real big fat piece of meat) into the cold water pot

Put some star anise and Sichuan peppercorns (I used vine pepper)

Add ginger slices, green onions, and peppers

Pour some cooking wine, these will remove oil and relieve greasiness

The cooked meat is ready to be pierced with chopsticks. Add some salt and cook for 10 minutes. Drain and let cool

Cut into thin slices and place on a plate

Mix minced garlic, very fresh soy sauce, mature vinegar, salt, and pepper oil into a juice (of course my family in Shanxi eats more mature vinegar)

Dip it in the sauce and eat it, it’s delicious
