Overview
This mixed noodles is very popular among my friends and sister, so I posted it. It’s my first time posting a recipe. Please give me some advice on any shortcomings

Pour flour into the basin, beat in two eggs, and a small amount of salt water (the salt water should be added in several batches to prevent the dough from turning into batter if too much is added at once) and knead out a harder dough

Cut the dough into slices and put it into a dough press to make it thin and then press it into noodles

Add water to the pot and bring to a boil. Add noodles and cabbage until cooked. When cooked, remove the supercooled boiling water and put it into a basin. Add a small amount of blended oil and mix well. Set aside

Cut the onion into small pieces, tear the chicken breast into thin strips, and prepare other ingredients (it would be better to replace the chicken breast with minced meat)

Turn on low heat, put oil in the pot, when it is slightly hot, add minced garlic and sauté until fragrant. Add a trace of salt, then add onions, sauerkraut, and shredded chicken breast, stir-fry until cooked, set aside

Put more oil in the pot again, add minced garlic, bean paste, fermented bean curd, Sichuan pepper powder, and soy sauce and stir well. Finally, pour in starch water to make a sauce (starch water = starch + water). Because there is less starch when making, the sauce is a bit thin, but it does not affect the taste.
