Eat in China, taste in Sichuan. Zigong, Sichuan is very famous for its ways to eat rabbit. There are no less than 100 ways to eat an ordinary rabbit. I particularly like the fresh pepper rabbit there. Another place is Bishan, Chongqing, where the rabbits are pretty good too. In our hometown of Luzhou, we like to eat rabbits chopped for nothing. It is simple and very refreshing. Chopped rabbit in white is easy to say but difficult to make, especially the cooking temperature

Choose a rabbit under 3 pounds, male is best. Float in cold water for 5 hours

Pour cold water into pot. Add ginger, green onion, pepper, salt and a small amount of alkali [I used 5 grams], bring to a boil over medium heat
