Remove the internal organs from the hairtail fish, cut off the head, and then cut into sections

Add shredded ginger, salt and cooking wine to the hairtail fish, mix well and marinate for 1 hour

Add 2 tablespoons of vegetable oil to the electric pan, heat it up, add the hairtail and fry until golden brown on both sides
