Her daughter said: Mom, let’s eat beef noodles with sauerkraut. This kid really knows everything. This reminds Mimi that the sauerkraut she made a while ago hasn't been eaten yet, so let's eat sauerkraut and beef noodles. Mima's arms have been hurting recently, so she didn't make noodles by herself. She used finished noodles, which is secondary. Pickled beef and sauerkraut are the main characters. It happened that my mother also came over. After eating, she asked me how to make noodles. This is also a recognized way of doing it, haha. Finely chop onion and ginger.

Prepare Sichuan peppercorns, cinnamon and star anise, and you can also add bay leaves. This is more optional, but the amount should not be too large.

Blanch the cut beef, add cold water to the pot, add ginger slices, green onions and cooking wine and bring to a boil, remove the blood foam.

Pour oil into the wok and saute some onions and ginger until fragrant.

Add sauerkraut and stir-fry until fragrant.

Add the blanched beef to the pot.

Add dark soy sauce, light soy sauce, salt, sugar, and season.

Transfer the stir-fried vegetables to a casserole, filter the beef soup into the pot, bring to a boil over high heat, then reduce to low heat and simmer for 40 minutes.
