Thousand-layer beef patties and hot and sour soup
Overview
The so-called Thousand Layer Beef Patty is an exaggeration, but the meat patty has a thinner dough, more meat, and more layers. Pork filling can also be used to make such meatloaf. My little master’s favorite beef filling. Served with hot and sour soup, it's delicious!

Put the beef filling into a cooking bowl, then add soybean paste, eggs, salt, chicken essence, light soy sauce, cooking wine, pepper powder, and cooking oil;

Stir evenly;

Then add chopped green onion, minced ginger, and sesame oil, stir evenly again, and marinate for 15 minutes;

Add cold water to the flour little by little, turn the flour into a thicker batter, and let it rest for 30 minutes;

Put more dry flour on the chopping board, place the risen flour batter on the chopping board, and roll it into an approximately square dough;

Spread the beef filling on the dough sheet, leaving a corner without the meat filling;

Cut a knife into the corner that is not covered with meat filling, fold it towards the meat filling, and stack it layer by layer;

After folding, pinch the corners tightly;

Preheat the pan and add the meat patties;

Fry until both sides are brown and it's done. Cut into triangles and serve on a plate.

Start making the hot and sour soup. Cut the water-cooked fungus into shreds and dry white beans in advance. Put them into the pot and pour a little hot water;

When the water bubbles, season and pour in water starch;

Then pour in the egg liquid and drop a little sesame oil, and that's it.
