Cut the eggplant into chopstick-thick strips and marinate with salt for one hour

Put vinegar, soy sauce, oil, sugar, minced garlic and starch in a bowl and mix well

Heat the pan and add appropriate amount of oil, squeeze out the water from the eggplant and stir-fry until soft

Pour in the prepared sauce and stir-fry until fragrant, then remove from the pan
