Cut off the whiskers of the river shrimp, wash and drain the water from the shrimp gun.

Heat oil in a pan until high, add river prawns and fry for about 2 minutes until the eyes of the prawns protrude. Turn off the heat.

Remove and drain the oil.

Heat the pan again with 20 ml of oil, add minced ginger, garlic, and chopped green onion, sauté until fragrant, and add sugar.

Add 100 ml of boiling water, white vinegar, chicken essence, and salt and cook until foaming. Add the fried river shrimp. Stir-fry over high heat until the water is reduced, turn off the heat, sprinkle with chopped green onion and sesame oil and stir-fry evenly.

Serve on a plate and garnish with coriander.
