First peel the yellow shrimp into shrimp. The so-called yellow shrimp is the kind of yellow shrimp often sold in Tianjin autumn market. It is a mixed-water cultured shrimp of seawater and fresh water. It is especially suitable for making shrimp. If it is troublesome, you can directly use ready-made shrimp, but you must remove the shrimp thread.

Rinse Longjing tea with 80-degree water. The amount of water should be enough to just soak the tea leaves.

When the tea water is slightly cool and not hot to your hands, use a spoon to scoop out the tea and put it into the shrimp.

After the shrimps are soaked evenly in tea, add an appropriate amount of salt, cooking wine and pepper. Be sure to add less pepper, otherwise it will cover the aroma of the tea. Mix well and let it sit for ten minutes to absorb the flavor. Control the water content of the shrimps, and then add an appropriate amount of starch.

When marinating the shrimp, prepare eggs and bread crumbs. If you don't use up one egg, you can just use the egg yolk.

Heat a pan with cold oil. When the oil is 60% warm, coat the starch-coated shrimp with eggs, then coat with bread crumbs, and fry over medium-low heat.
