Scallion hand cakes
Overview
The hand pancakes made with semi-hot noodles are filled with a lot of chopped green onions. They are fragrant and crispy and are so delicious that you can’t stop eating them. You must remember to either use full-boiled noodles, which means all the boiling water is used to knead the dough, or use half-boiled noodles, that is, knead the dough with half boiling water and half cold water, and then mix the two together. Never use cold water to knead the noodles. If you eat them hot, they will become hard, which will affect the taste.

Put flour into a basin, pour boiling water, and cook half of the flour soup

After stirring a few times with chopsticks, pour in an appropriate amount of cold water to moisten the other half of the flour

First use chopsticks to stir the dough into a lump. When the temperature drops to hand temperature, knead it into a slightly smooth dough with your hands, then cover it and leave it for about 20 minutes

When making noodles, peel 3 green onions, wash and cut into pieces, add a little vegetable oil and salt, mix well and set aside

Take out the dough, divide it into three equal parts, and roll them into balls

Take one of the doughs and roll it into a rectangular sheet about 2 mm thick. Apply a layer of vegetable oil on top. If you want it to taste salty, you can sprinkle some more salt at this step

Sprinkle an appropriate amount of chopped green onion on the dough

Roll into a roll from bottom to top

Cut the roll into two lengthwise with a knife

Cut side up, roll into disk shape

First flatten it with your hands, then use a rolling pin to roll it into a cake shape about 7 or 8 mm thick

After preheating the upper and lower plates of the electric baking pan, pour a little vegetable oil into the lower plate and spread it evenly with a brush. Place the chopped green onion cake into the plate and select the "Flat Cake" program

Close the upper plate and heat both sides. You can turn the cake over halfway and fry both sides until golden brown

Use chopsticks to split the scallion pancake while it's still hot. The outside is charred and the inside is tender, with distinct layers
