Clean the scallops (and scrub the shells) and cut them in half.

Soak the vermicelli in warm water until soft and set aside.

Smash, peel, wash and mince the garlic and set aside.

Use a knife to remove the shellfish meat first.

Spread the vermicelli on each shell and put the shell meat on top of the vermicelli.

Add a small amount of minced ginger, salt, sugar, fresh soy sauce, oyster sauce and a little water to the golden and silver garlic and mix well (see the tips below for how to make golden and silver garlic).

Spoon the seasoning evenly over each shell.

When the water in the pot is boiling, add the scallops and steam them over high heat for about 6 to 8 minutes. Garnish with a little chopped green onion and red pepper and serve.
