Overview
As soon as this oil spin came out of the oven, my friend took it to eat. My daughter said I made too little, but it was really delicious. It’s just that the oil swirl I made wasn’t pretty enough. Youxuan is a traditional snack of the Han people in Jinan, Shandong Province. It has a crispy outer skin, tender inner flesh, and a fragrant aroma of green onions. It is named Youxuan because of its shape like a spiral and its oily and golden surface.

Prepare ingredients.

Add 105 grams of water to the flour and mix into a dough, let it rest for 30 minutes.

Chop the green onion into mince, add lard and mix well.

Divide the risen dough into six portions.

Roll out into a long tongue piece about 1mm thick.

Turn the dough sheet over and spread a layer of scallion oil on it.

Fold the dough sheet in half. Apply a layer of peanut oil.

Pinch one end and stretch it slightly, roll it up from one end, and stretch it while curling.

Close the bottom and place it vertically on the chopping board, and make all the dough rolls.

Pull off the dough at the bottom with your hands.

Heat a pan, add oil, layered side down. Press the cake with your hands and rotate it into a round cake with a thickness of about 7-8 mm.

Fry until golden brown on both sides.

Bake in the preheated oven at 200 degrees for 5 minutes. Use your hand to push back in the middle to form a small spiral nest.
