Zhijiang Duck
Overview
I traveled to Hunan with my best friend and ate this Zhijiang Duck dish and couldn’t forget it after I got home, so I tried making it myself and it tasted pretty good (⊙o⊙)!

Wash the duck and set aside

Chop into pieces and prepare stir-fry ingredients

Cut the pork belly into small pieces and set aside (you should use fresh pork belly. If you don’t have it at home, I will use the twice-cooked pork belly I usually prepare)

Heat the oil in a pan and stir-fry the star anise, ginger slices, peppercorns, duck head and duck feet

Add duck meat and stir-fry

Stir-fry the duck meat until the skin is slightly browned, then stir-fry the pork belly

Add the chili segments and garlic cloves and stir-fry

Add two teaspoons of dark soy sauce for coloring

Pour two bottles of beer

Bring to a boil, then reduce to medium heat and cook for about forty minutes

Cut the peppers with a diagonal knife and tie the shallots into knots

When the duck meat is cooked, add hot peppers and green onions
-
Add a teaspoon of salt and half a teaspoon of chicken powder to taste

Stir fry for two minutes and it’s ready
