I traveled to Hunan with my best friend and ate this Zhijiang Duck dish and couldn’t forget it after I got home, so I tried making it myself and it tasted pretty good (⊙o⊙)!

  1. Wash the duck and set aside

  2. Chop into pieces and prepare stir-fry ingredients

  3. Cut the pork belly into small pieces and set aside (you should use fresh pork belly. If you don’t have it at home, I will use the twice-cooked pork belly I usually prepare)

  4. Heat the oil in a pan and stir-fry the star anise, ginger slices, peppercorns, duck head and duck feet

  5. Add duck meat and stir-fry

  6. Stir-fry the duck meat until the skin is slightly browned, then stir-fry the pork belly

  7. Add the chili segments and garlic cloves and stir-fry

  8. Add two teaspoons of dark soy sauce for coloring

  9. Pour two bottles of beer

  10. Bring to a boil, then reduce to medium heat and cook for about forty minutes

  11. Cut the peppers with a diagonal knife and tie the shallots into knots

  12. When the duck meat is cooked, add hot peppers and green onions

  13. Add a teaspoon of salt and half a teaspoon of chicken powder to taste

  14. Stir fry for two minutes and it’s ready
