Garlic Roasted Eggplant
Overview
Eggplant is my favorite, but American eggplants are too big, with thick skin and not tender. It seems that they can only be improved by cooking. I have made fish-flavored, steamed, braised and stuffed in the past. Now I want to have a fresh taste, so I chopped some garlic and roasted eggplants. It is easy to make, quick, delicious and soft.

Peel the eggplant and cut into cubes;

Brush a baking sheet with oil and place the eggplants on the baking sheet;

Chop about a group of garlic, add sesame oil, vegetable oil, salt, sugar and pepper, stir evenly;

Pour the minced garlic on top of the eggplant pieces;

Bake in the oven for 10-12 minutes at 400F. After baking, use a rubber spatula to transfer the eggplant with the lid to a plate and sprinkle with fresh parsley.
