Peel and flesh the winter melon, cut into 4cm square chunks, and cut into diamond-shaped cuts on the surface; cut the green onion into sections, leave some remaining and chop into chopped green onion, and slice the ginger.

Heat oil in a pot, add ginger and stir-fry until fragrant, then fry the winter melon pieces until slightly dry on the surface and serve.
