Clam tofu soup
Overview
I am a seafood lover. Today I saw that the clams in the supermarket were very fresh and I couldn’t help but buy a box. When I got home, I quickly made tofu clam soup.

Wash the clams, soak them in water with appropriate amount of salt for 2 hours and spit out the sediment

Cook the clams in a pot. Pour cold water into the pot and boil until the clams slightly open their mouths. Immediately remove the water and let cool. Take out the clam meat and set aside

Let the clam soup in the pot stand for about 10 minutes, pour it into a clean basin, and throw away a little sediment at the bottom of the pot

Wash the tofu and cut into small pieces

Heat the pan, add the oil, add the onions and ginger and stir-fry over low heat until fragrant. Add the minced meat and stir-fry until fragrant

Add clam soup

Bring to a boil over high heat and remove the foam, add an appropriate amount of salt and a little pepper, and chicken essence to taste

Add water starch and sprinkle with minced chives
