Forgot to take a picture of the new lamb chops. Put the lamb chops into a pot, add water, cooking wine, ginger and bring to a boil. Wash and set aside. Prepare all accessories.

Heat the oil in a pan until it is 90% hot, add half of the green onions and ginger, stir-fry until fragrant, then add the spices and stir-fry until fragrant.

Pour in the lamb chops and stir-fry, add the light soy sauce and stir-fry until it changes color, then add the cooking wine and stir-fry until the wine smell disappears.

Add water to cover the lamb chops, add cooking wine, salt, dark soy sauce, green onions, and bring to a boil over high heat.

Pour into a saucepan and simmer for two hours, or simmer in a pot over low heat.

After simmering, put it into the wok, add the remaining green onions, and reduce the juice over high heat.
