Overview
Spring pancakes are my favorite Northeastern food, bar none! My mother-in-law's father is a great chef, and my method of baking spring cakes was passed down from her. I must be very authentic about how authentic my cooking methods are~~ Every year after that, I will let my family eat spring cakes, which is a spring cake feast. Today I made two types of spring cakes: baked spring cakes and steamed spring cakes, just because the big man in the family likes baked spring cakes, and the little man likes steamed spring cakes, so they are difficult to serve, hahaha

Use boiling water to stir the flour into flocculent form

Mix well with a kitchen machine and let stand for 15 minutes

Divide the dough into four parts, 200g each

Take a large dough and divide it into ten equal parts, 20 grams each

Roll out into dumpling wrapper size

Apply oil to each slice

Grease ten pieces of dough and put them together

Roll out both sides into a large round cake

Place in a greased steamer

The steam function of the oven is set to 110 degrees for about 15 minutes

Then divide the remaining dough into 12 portions, each 50g round

Flatten with the palm of your hand

Apply oil to every surface

Place three pieces of dough on top of one another and apply oil on the surface to prevent it from drying out

Roll them out into large thin sheets on both sides. You can bake them while rolling

Brush the pan with oil, cover and cook the spring cakes over medium-low heat, turning once in the middle

After baking 12 cakes, start cooking
