Soak the mushrooms in water one night in advance (because I have to make other dishes, so I soaked some more), take three or four soaked mushrooms and cut them into strips.

Remove the scales and internal organs from the plaice, rinse and cut into segments.

Slice the green onion diagonally; flatten the garlic; cut the ginger into slices; cut the onion into shreds.

Sauce: Mix 2 spoons of light soy sauce, 1 spoon of dark soy sauce, 1 spoon of cooking wine, a little pepper, 1/2 spoon of sugar and 100ml of water. (For those of you who are heavy-mouthed, you can add some salt.)

Pour vegetable oil into the pot, heat it up over high heat, add onions, ginger, garlic and onions and stir-fry until fragrant. Pour in the sauce and bring to a boil. Add fish segments and mushrooms and turn to medium-low heat until the sauce dries up. Turn off the heat and serve on a plate.
