After washing the pig intestines (for the cleaning process, please refer to my previous recipe - Stir-fried large intestines with pickled cabbage (complete with cleaning process)), simmer in white brine over high heat for 30 minutes, then turn off the heat and continue soaking for 30-60 minutes until the softness and hardness of the pig intestines reaches the ideal requirement.
