  1. Cut the old tofu into small cubes and put it on a plate. Take an appropriate amount of fresh shiitake mushrooms, remove the mushroom handles, make a cross cut on the top of the shiitake mushrooms, put them on a plate and set aside. Appropriate amount of lean meat, cut into dices of suitable size and set aside. Appropriate amount of millet pepper, cut into millet rings and set aside.

  2. Add an appropriate amount of oil to the pot, heat it to 50% heat, add the tofu cubes, and fry slowly over low heat. Keep turning over during the frying process, and fry until golden brown on all sides. After all sides are golden, pour out the filtered oil. The tofu fried over low heat has many holes in it.

Heat the pot, remove an appropriate amount of oil, add star anise, peppercorns, minced garlic, minced ginger, millet pepper rings, and bean paste in sequence, stir over low heat until fragrant, then add minced meat, stir-fry until minced meat is fragrant, then add appropriate amount of water, dark soy sauce, pepper, white sugar and salt, finally add in mushrooms, cover the pot, and simmer over low heat for 10 minutes.

Place an appropriate amount of kelp knots on the bottom of the pot, pour in the fried tofu, pour the cooked broth, minced meat and shiitake mushrooms into the pot, cover the pot, bring to a boil, then turn down the heat, simmer for 20 minutes, open the lid, reduce the juice over high heat, and pour the soup on the mushrooms. The tofu is full of soup, add an appropriate amount of chicken essence, sprinkle with garlic sprouts, cover the pot, and turn off the heat.
