Jiangxi Fried Fish

Overview

This dish is a typical home-cooked dish in southern Jiangxi. Every year when I go home to visit relatives, I must eat this dish. I will never forget the MSG in my hometown.

  1. Cut the fish into large thick slices, cut the garlic into sections, and cut the pepper into diamond-shaped slices.

  2. Marinate the fish with salt, monosodium glutamate, soy sauce, salt, and cooking wine for twenty minutes, add a little starch, mix well, and fry in oil for a few minutes.

  3. Fry until it changes color slightly.

  4. Put oil in the pot, add garlic sprouts, stir-fry ginger slices, then add chili flakes and onion slices, stir-fry briefly, then add fish fillets, add soy sauce, salt and a little vinegar. Pour vinegar into the middle of the dish, add MSG, thicken with water starch and serve.
