Spinach hand-made noodles
Overview
Hand-rolled noodles are smooth and chewy, much more delicious than bought dry noodles, and the preparation is not difficult. A bowl of hand-rolled noodles in a restaurant is several times more expensive than ordinary noodles, so it is naturally more delicious. However, because it takes effort to roll the noodles, many people are now reluctant to roll them themselves. You might as well give it a try during holidays and weekends. You can add some spinach juice appropriately. The resulting noodles will be green and shiny, making you feel happy and motivated to make noodles.

Steps
-
Remove the roots and yellow leaves of spinach, wash it and blanch it in a pot of water for a minute or two, then take it out and let it cool slightly. Use a juicer, blender or grinding machine to make vegetable juice. There is no need to add additional water. Just add about a bowl of water for cooking spinach.
-
Add an egg, an appropriate amount of flour, and a little salt to the squeezed spinach juice. Stir it into a floc first, and then knead it into a slightly harder dough. The hardness of the dough is slightly harder than that for making steamed buns.
-
The dough will not be smooth at the beginning. You can cover it with plastic wrap first, let it rest for 30 minutes and then knead it and it will be very smooth. You can also knead the dough directly with a chef's machine to save effort.
-
When the dough is smooth and delicate, you can start rolling it. You can choose a wooden cutting board and use even pressure to roll the dough into a round shape.
-
If the dough sticks to the rolling pin during the process, you can sprinkle an appropriate amount of corn flour as hand flour to prevent sticking. The dough will become thinner and thinner until it is rolled to the thickness you like.
-
If the dough sticks to your hands, it's probably because the dough is too soft. Next time, be sure to remember to add less liquid or sprinkle more hand flour to solve the problem. Fold the rolled out dough, cut it into noodles with a knife, then sprinkle with corn flour and shake it up before cooking.
