Cut the beef brisket into pieces and put it into a pot with cold water. Add cooking wine and 1 tablespoon of Sichuan peppercorns to blanch the water, then remove and drain.

Add vegetable oil to the pot, add beef brisket and stir-fry until it changes colour. Add scallions, ginger slices, star anise, dried chilies, 1 tablespoon of Sichuan peppercorns and rock sugar and stir-fry until fragrant.

Add rice wine, light soy sauce, dark soy sauce, pour in appropriate amount of water and bring to a boil, then reduce to low heat and simmer for 40 minutes.

Add salt, add hard-boiled and peeled eggs, simmer over medium heat for 20 minutes, and then reduce the juice over high heat.
