  1. Peel and slice the yam!

  2. Slice carrots, green peppers, ginger and garlic. Soak dried shiitake mushrooms!

  3. The yam is quickly soaked in water (crispy texture and non-stick)!

  4. Saute the ginger and garlic, add the mushrooms and stir-fry for a minute!

  5. Add carrots and stir-fry!

  6. Add the yam and stir-fry for a while!

  7. Add green pepper and stir-fry, add light soy sauce, stir-fry evenly, and season with salt!

  8. Serve on a plate, crispy and fresh!
