Braised chicken legs with scallion oil

Chop the chicken legs into small pieces for easy cooking and flavor.

Soak in water for ten minutes, soak out the blood inside, squeeze out the water, add a spoonful of oyster sauce, a spoonful of light soy sauce, a spoonful of cooking wine, a little dark soy sauce, white pepper, and white sugar, mix well and marinate for 15 minutes (I forgot to take a picture 😂).

Heat oil in a pan, add chopped onions and green onions.

Fry onions and shallots until golden brown and remove.

Add the marinated chicken legs directly into the fried scallion oil, fry over low heat until it is set.

Pour in the remaining ingredients for marinating the chicken legs, cover and simmer over low heat for 15-20 minutes.

Open the lid and use high heat to collect the juice.

Remove from pot and serve on a plate, sprinkle with chopped green onions.
