Steamed fish with dried radish
Overview
Dried radish is a kind of pickled dried radish, which can remove fishy smell and increase flavor. Steam it together with the fish so that the fish meat can fully absorb the fragrance of the dried radish. Dried radish also absorbs the deliciousness of fish. Combining the two makes it even more delicious.

Wash the sea bass, this is the packed fish bought in the supermarket

Make an incision under the gills as deep as the fish bone

Hold the fish with one hand, place the knife flat with the other hand and use the spatula to slice the fish meat against the fish bones. I only used half a piece of fish here

This is the dried radish I pickled myself. I just dry the radish half-dried in the sun, sprinkle it with ginger slices, put it in a bottle, pour it into cold water and marinate it for about 10 days. Pour the dried radish water into the fish and mix well, then wash it with water to remove the fishy smell. Marinate with marinade for 10 minutes, add a little starch and a little oil, mix well and set aside

Slice onion, ginger and red pepper respectively

Pinch the dried radish and spread the water into the bottom of the bowl

Put the marinated fish in the steamer and bring water to a boil. Add the fish and steam over high heat for 3-5 minutes. Turn off the heat and steam for 1 minute.
