Stewed with minced meat and eggplant
Overview
Eggplant is one of the few purple vegetables and is also a very common home-cooked vegetable on the table. I always thought that eggplants only come in purple or black-purple, but I didn’t expect that there are also cyan and white eggplants. Eggplants in the next season are the most delicious, with thin skin, fewer seeds, and thick flesh. Old eggplants, especially those after autumn, contain more solanine, which is harmful to the human body and should not be eaten in large quantities.

One eggplant, minced meat, appropriate amount of ginger

Rinse the eggplant and cut into petals
